Try our pumpkin perfect cookie recipe

Warming smells of cinnamon and nutmeg are wafting through our kitchen today as Sylwie bakes a batch of pumpkin and mixed spice cookies, countering the cold, rainy autumnal day outside.

It’s mid-October and if all talk in your house is about Halloween costumes with the kids all wanting different outfits to last year, it’s time to rummage through the fancy dress box, hunt through the charity shop rails and get creative!

Luckily, baking a batch of these yummy seasonal Double Pumpkin cookies won’t take you any time at all.

Made with a base of oats and wholemeal flour, they’re super satisfying and nutritious. They are also packed with fresh pumpkin and crunchy pumpkin seeds, which are loaded with potassium, rich in fibre and high in the antioxidant beta-carotene (excellent for both immunity and eye health).

Quick and easy to make, they are a great wholesome after-school treat. They’ll also be a hit at Halloween. Parents will be happy too - sweetened with banana and a touch of unrefined sugar makes them much healthier than the ubiquitous sticky sweeties.
